Introduction

Ingredients

    Quinoa, 1/4 cup dry, cooked
    1 large tomato
    Green Bell Peppers, 1/2 cup, diced
    Cucumber (peeled), 1/2 cup, diced
    GOYA Chick Peas (Garbonzo Beans), 1/2 cup rinsed
    Guacamole (Spicy Wholy Guacamole), 1 snack pouch
    Cilantro, raw, 4 tbsp
    Lime Juice, half lime

Tips

I like to eat this as a lunch so I calculated the ingredients as a 1 cup portion. If you're using this as a side dish, your portions will be smaller.


Directions

Cook 1/4 cup of dry Quinoa according to package. Cool.

Then mix Quinoa and remaining ingredients together. I would recommend mixing the lime juice and guacamole together before adding to the salad. This will help it from turning brown.

Serving Size: Makes 4, one cup servings.
