Ingredients

    1 lb beef stew meat
    5 stalks celery, chopped
    1 small onion, chopped
    1 can rotel diced tomatoes with green chili
    48 oz (or more if you like) V-8 juice

    Season with whatever spices you desire. I used:
    Black pepper
    Sea salt
    Cumin
    Red pepper flakes (go easy as it does make the soup spicy.)

Tips

This is especially good for supper the next night when you come home from work. It is one of those soups the longer you cook (on low) the more flavorful it is.


Directions

Brown meat and place in crock pot
Add all ingredients and cook on medium overnight.

Serving Size: Makes 6 - 8 1 1/2 cup servings
