Ingredients

    1 lb extra-lean ground sirloin
    1 medium onion, diced (1 cup)
    1 cup green pepper, chopped or strips
    2 cloves garlic, minced
    1 can Ro-Tel
    1 can canned tomatoes
    1 can black beans
    1 can kidney beans
    2 tbsp chili powder
    2 tbsp paprika
    1 tsp ground black pepper
    1/2 bag (2.5 cup) frozen carrots, broccoli, cauliflower

Tips

To make this a vegetarian dish, omit the beef or replace with soy crumbles.

You may substitute ground turkey for the beef.


Directions

Heat a dutch oven or similar large pot over medium high heat. Add the ground beef, onions and peppers, cook 3 minutes, and turn down the heat to medium. Stir occasionally while continuing to cook. Turn down the heat to medium-low and add the garlic. Continue to cook about 3 more minutes or until the meat is thoroughly browned. Add the tomatoes, beans and seasonings (adjust to taste). Mix well and allow to simmer for about 5 minutes. While the chili is simmering, place the frozen carrots, broccoli and cauliflower in blender or food processor and chop until pulverized into tiny pieces. Add the pulverized frozen vegetables to the chili. Continue to simmer for 30-60 minutes. Add water if the chili gets too thick.

Serving Size: Makes about 10 servings, 1 cup each

    Incredible!
    This is a surprisingly good recipe. The finely chopped California mixed vegetables hide in there adding lots of nutrients. We have made this a couple of times and really like it! - 1/17/17
