Introduction

Ingredients

    1 c. whole wheat flour
    1 1/4 c. all-purpose flour
    1 c. sugar
    1 1/2 tsp. baking powder
    1 tsp. salt
    1 c. butter, softened
    3/4 c. skim milk
    3 eggs
    2 Tbsp. poppy seed
    1 Tbsp. freshly grated lemon peel

Tips

Bread can also be baked in greased 9 x 5-inch loaf pan. Bake for 45 to 60 minutes or until toothpick inserted in center comes out clean.


Directions

Preheat oven to 350. Grease bottom only of four (5 1/2 x 3-inch) mini loaf pans. Set aside.

Combine first five ingredients and mix well. Add remaining ingredients and mix until well mixed.

Spread batter into prepared pans. Bake for 30 to 40 minutes or until toothpick inserted in center comes out clean.

Serving Size: Makes 32 servings (4 mini loaves)
