Ingredients

    2 8-oz. swordfish steaks
    1 tblsp. soy sauce
    2 tsp. canola oil
    juice and zest from half a lemon
    1 tsp. minced ginger root
    1 garlic clove, minced
    1 tblsp. whole grain mustard
    1.2 tsp. lemon-pepper seasoning

Tips

do not marinate any longer as the fish will taste metallic.
chicken or pork can be used instead of fish


Directions

place swordfish in large zip bag. mix together the rest of the ingredients in a bowl, then pour over the swordfish. seal bag, place in refrigerator, and marinate for 3-4 hours, turning once. prepare your grill, spraying the surface with PAM. cook the fish on medium (gray ash coals) for 7 minutes on each side, basting with remaining marinade.
