Ingredients

3 bunches fresh greens, blanched and chopped (spinach, chard, arugula, etc.)
1.5 cups rice, cooked (heritage blend, brown, etc.)
3 t olive oil
1 medium onion, chopped
1-2 T fresh herbs, minced (rosemary, thyme, tarragon, etc.)
2-3 cloves garlic, minced
3 eggs
0.5 cups cheese, grated (cheddar, gruyere)
Directions
Blanch and chop greens
Cook rice according to directions
Heat oven to 375 degrees.
Brush baking dish with olive oil.
Saute onions in 2 t olive oil over medium heat until soft.
Add herbs and garlic.
Cook until garlic is fragrant.
Add greens and stir until warm and thoroughly mixed.
In a separate bowl, beat eggs.
Stir in greens mixture and cheese.
Pour mixture into baking dish.
Drizzle remaining olive oil over the top.
Bake for 40 minutes until browned on top.
Serving Size: Makes 6 2x4 inch pieces.
