Number of Servings: 12

Ingredients

    3 large bananas, mashed
    1/2 cup sugar
    1 egg, beaten
    1 tsp baking soda
    1 tsp baking powder
    1 cup flour
    1/2 cup rolled oats (instant is fine)
    1/3 cup applesauce
    1/2 tsp salt
    1/2 cup mini chocolate chips
    1/2 cup chopped pecans


Directions

Add sugar to mashed bananas and mix.
Add beaten egg and mix.
In separate bowl mix all dry ingredients.
Add dry ingredients to the banana mixture and mix well.
Mix in applesauce.
Add chocolate chips and nuts and stir.
Spoon into medium size muffin tin fill 3/4 full.
Bake for 20 - 25 minutes @ 350 degrees or until toothpick comes out clean.

Makes 12 muffins.

Mini muffins, bake 8 -10 min or until toothpick inserted is clean.

For best muffins do not over mix the batter, just stir until all ingredients is mixed well and do not over bake.

If they do not disappear quickly, make sure to refrigerate as they have no preservatives to keep them from spoiling.

    Incredible!
    So moist and flavorful. I added walnuts instead of pecans. I like that it makes just a dozen muffins, easy to eat. Will use this recipe often with overripe bananas. - 4/18/10

    Incredible! Made this recipe 3 weeks in row now. I have a muffin every morning for breakfast with just a small amt of almonds. Losing weight and feeling great so there cannot be many calories in them. I left the chocolate chips in and took the nuts out. Not hungry til lunch.Super moist! Love it - 3/25/10
