Ingredients

    1 Large Eggplant
    .5 cup fresh spinach
    .5 cup chopped mushrooms
    1 medium tomato sliced
    .5 cup Heart Smart Prego spaghetti sauce
    Basil
    .5 cup Mozzarella cheese (made with Skim Milk)

Directions

Slice eggplant long ways. Scoop approx. 1 inch deep.
Add sauce, spinach, mushrooms and slices of tomato and basil.
Bake at 350 degrees for 25 minutes
Add cheese
Bake until cheese is melted.
