Ingredients

*Codfish -3.5 oz or 100g, 10.5 oz
Zucchini, 400 grams
Onions, raw, 0.7 cup, chopped
Bell peppers (Green, Red, Yellow, Orange), 0.3 cup
Jalapeno Peppers, 1 pepper
Garlic, 2 clove
Sour Cream, reduced fat, 200 grams
Cottage Cheese, Nonfat, 170 grams
Directions
- Boil the codfish. When it’s done, put under cold water to stop cooking process and start cleaning it up by removing all spines and all skin.
- Cut all the vegetables in small pieces. Then put on a pan the olive oil and start to cook the vegetables in this order: first put onions, then garlic, then two kind of peppers and the zucchini. When the veggies appear to be cooked, add the cod to the mixture and let it cook. Season as you want! I used salt and pepper only.
- Add sour cream and let it cook.
- Pre-heat your oven to 200ºC.
- Put the mixture of veggies and cod into the oven sprinkled with cottage cheese and let it cook for about 15 minutes.
Serving Size: Makes 4 individual meal servings
