Ingredients

3 medium bananas
1 egg
1/3 c. unsweetened applesauce
1/2 c. granulated sugar
1/2 tsp. vanilla
1 1/2 c. whole wheat flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 c. wheat germ
1/2 c. Ghirardelli 60% Bittersweet Chocolate chips
Tips
Stir just until mixed. Do not overstir.
I use a seasoned stoneware muffin pan so I do not need to grease the pan. If you grease your muffin tin, make sure to add those calories.
Directions
Mash bananas. Add egg, applesauce, sugar, and vanilla.
Sift together flour, baking powder, baking soda, salt, and cinnamon and add to banana mixture. Gently stir in wheat germ and chocolate chips.
Bake at 375 for 18-20 minutes.
