    3 c. flour
    1 t. salt
    1 t. baking soda
    1 t. baking powder
    3 t. ground cinnamon
    2 eggs
    1 c. plain nonfat greek yogurt
    2 1/4 c. sugar (use 1/2 Stevia to reduce the calories)
    3 t. vanilla extract
    2 c. shredded zucchini


Combine all ingredients thoroughly. Place into 2 loaf pans sprayed lightly with cooking spray. Bake at 325 degrees for 40-60 minutes, or until cooked through. Cool completely before cutting.

Serving Size: Makes 2 loaves - serving size based on cutting into 12 slices
