Ingredients

Sweet potato - baked in skin - 3 medium
Garlic - 3 cloves minced
Onions - 1 cup chopped
Red Pepper - 1 cup chopped
Serrano Pepper - 2
Tomatoes - 2 cups chopped
Basil - 10 leaves (or more if you like it) chopped
Chicken Broth - Low sodium - 2 cups (8 fl oz)
Spinach - 4 cups
Water - 2 cups (8 fl oz)
Salt - 2 tsp
White pepper - 1 tsp
Tips
You can add chicken for a complete dinner.
Directions
Wash sweet potato & roasted for 30' to 45'
Cook onion, red pepper, serrano pepper & garlic for 2 min - Add tomatoes, basil, salt & peper. Cook for 5' and add chicken broth. In high heat, cook it for 10' & add spinach.
Let it simmer while you peel the sweet potatoes.
Add the sweet potatoes to the pot & let it simmer for 10' to 15' - Add 1 cup of water at the time (I like my soup thick)
Turn off the heat & let it cool down before to put it on the blender. Blend it & it's ready to go!
