Number of Servings: 6

Ingredients

    Squash:

    1 whole Spaghetti Squash
    1/2 Cup Water
    Non Stick Spray
    Roasting Pan

    Sauce:

    1 Lb Ground Extra Lean Turkey
    1 Can Aylmers Italian Seasoned Tomatos
    1/2 Jar Classico Roasted Garlic Marinara Sauce
    1 Clove Garlic, Chopped
    2 Small Bell Peppers
    4 Small white mushrooms, chopped
    1 Tsp Ground Sage
    1 Tsp Ground Thyme
    1 Yellow Onion, Chopped
    3 Green Onions, Chopped
    1 Tbsp Olive Oil
    1 Tsp Parsley
    Shredded Parmesan Cheese
    Salt & Pepper to taste

Tips

Add as many vegetables as you like to the sauce, the more the better!


Directions

Squash:

Preheat oven to 400*F
1. Lightly spray roasting pans with non-stick spray
2. Add 1/2 Cup water to the bottom of the pan
3. Slice Squash lengthwise and scoop out pulp, discard
4. Place flesh side down into pan
5. Roast squash in oven approximately 1 hour or until flesh is tender

Sauce:

While squash is roasting...
1. Preheat large pot, add olive oil to the hot pan
2. Add chopped onion and garlic, sauté until tender
3. Add ground turkey meat and cook on Medium heat until cooked through
4. Add chopped bell pepper and mushrooms
5. Once vegetables are tender add canned tomatos and tomato sauce
6. Stir in Sage, Thyme, Salt & Pepper
5. Bring to a boil and let simmer approximately 15 minutes

Once Squash is tender, scoop flesh out with a spoon. Add sauce.
Top with parsley & parmesan cheese & serve!
