Ingredients

    1 sweet potato - cubed, mashed
    1 can canellinni beans, mashed
    1 C panko crumbs
    1 egg
    1 jalapeno, minced
    1 tsp garlic
    1 dash liquid smoke
    .5 tsp salt
    .5 tsp black pepper
    1 tbs McCormick Seasoning blend - Mesquite Bacon
    cooking spray

Tips

These patties are great on a sandwich, in a wrap, or just by themselves. The texture won't be like a burger, but they are just as filling! Making them smaller will make them less likely to fall apart.


Directions

Skin and cube sweet potato and boil until soft. Drain and add beans to bowl, add minced jalapenos. Drain sweet potatoes and add to bowl, mash until mostly smooth. Add egg, panko crumbs and spices and blend until well combined. *You may have to add more or less panko crumbs - should be consistency of hamburger patty meat* Add cooking spray to a skillet and heat on medium. Form patties and cook on skillet until bottom is browned (but not burnt) flip over and cook on other side.

Serving Size: Makes 8 patties (2 patties per serving)
