Ingredients

    Onion, raw, two medium
    Chickpeas (garbanzo beans), 4 cups
    Garlic, 4 cloves
    Ginger Root, 2 oz minced
    Hot green chile, chopped, 4 T
    Olive oil, .5 cup
    Cumin seed, 1 T
    Cumin seed, roasted, 2 t
    Corriander, 1 t
    Paprika, 2 t
    Garam masala, 1 t
    Water, 1 cup
    Baby lemon, juice and zest, 2

Tips

Serve with rice or quinoa and mixed greens.


Directions

Heat oil in large saucepan. Add onion, garlic, ginger and pepper and sauté over medium heat until browned, about 5 minutes. Turn heat down to medium-low. Grind and add the coriander, cumin (raw and roasted), cayenne, turmeric, paprika and garam masala. Cook for a minute or two, then add the tomatoes and any accumulated juices, scraping up any bits that have stuck to the pan. Add chickpeas and water to make 2 quarts total. Simmer uncovered for 10 minutes, then stir in salt and juice and zest of two baby lemons.

Add water to make 2 quarts.

Serving Size: Makes 8 one-cup servings.
