Ingredients

    1 package Fresh & Easy Chicken Sausage (5 links)
    5 Cups cooked brown rice
    4 Scallions (green onions) chopped
    1/4 cup sugar or the equivalent to from Stevia or Agave Syrup
    1/2 cup water
    2 tablespoons soy sauce
    2 tablespoons rice wine vinegar
    2 tablespoons ketchup
    2 tbsp fresh ginger (or 1 tsp of ground ginger)
    1 large clove garlic (or 1 tsp garlic powder)
    1 tablespoon lemon juice
    1/8 teaspoon sesame oil
    1 tablespoon hot mustard
    2 teaspoons water
    1 -2 teaspoon garlic and red chile paste or Sriracha Sauce

Directions

Cook 5 cups of brown rice with scallions and sausage. While the rice & sausage are cooking, prepare the sauce for this mixture by using a food processor. Process all remaining ingredients (except cucumbers) until blended well. Set aside. When brown rice & sausage are done cooking, remove the sausage links from the rice and food process them until the sausage is finely chopped. Mince 1/2 of a large cucumber and combine everything together. Toss the mixture lightly. Spoon into lettuce leafs and serve. Bon apetit!
