Introduction
Prepare your ingredients the night before and let your beans soak all night. In the morning put it all in the slow cooker and supper is ready when you get home. Ingredients

1 cup 9 bean soup mix ( any mix of beans, peas and lentils will do)
4 cups vegetable stock
1 large onion, coarsely chopped
3 celery stalks, chopped
4 medium carrots, halved and sliced
1 28oz can diced tomatoes with juice
1 5.5oz can tomato paste
1tsp Italian herbs
1tsp Cayenne pepper
Directions
The night before:
Put all ingredients except the bean mix in a slow cooker's ceramic pot and refrigerate overnight.
Put bean mixture in a covered container, cover with water and let soak overnight at room temperature.
In the morning:
Put ceramic pot in the slow cooker and turn on to low.
Drain and rinse the bean mix then add to slow cooker.
Cover cooker and let cook for ten hours on low.
Serve with whole grain crusty buns and enjoy
makes 12 1 cup servings.
When reheating leftovers add in zucchini and mushrooms, it's great.
