Ingredients

    1/3 lb ground chuck patty
    1/2 portabella mushroom cap sliced and sauteed
    1/4 diced sweet red pepper
    1 cup of spicy spring mix
    2 tbs of sesame vinegarette
    1 tsp of honey mustard

Tips

You can use spinach, kale or any leafy greens. I had just picked up some spring mix that had a spicy green (tasted like dijon mustard) mixed in and thought this was delicious. Also, I found a wonderful dressing called "Wild Thymes" that has a toasted sesame vinaigrette that is wonderful. You could also use Ground turkey or even a vegi-burger.


Directions

Saute mushroom slices in a little coconut oil and set aside.
Cook hamburger patty and red peppers in saucepan and drizzle 1 tbls of the sesame vinegarette over burger and peppers and cook until burger is well done.
Add mushrooms & 1 cup of spring mix. Drizzle 1 tbls of vinegarette over spring mix & mushrooms and saute until lettuce is wilted.
