Ingredients

32 oz fat free chicken broth
4 cups diced new potato, with skin
.5 cup chopped onion
.5 cup chopped carrot
6 cloves garlic minced
.5 tsp celery seed
4 slices bacon cooked crisp
2 cups fat free half and half
.25 cup flour
1 tsp salt
.5 tsp pepper
.5 tsp celery seed
1 tbsp butter
Tips
you could use store bought bacon crumbles. I would normally add chopped celery but didnt have any, so substituted celery seed for the flavor. You could also add a low fat shredded cheddar to the cream sauce before adding to the soup base. Cabot has a 75% reduced fat version of cheddar. Things like cooked broccoli, or corn would also make good additions.
Directions
cook bacon in skillet, discard all but 1-2 tsp bacon grease. Saute onion carrot and garlic till transparent. place potato chicken broth, seasonings and vegetables in pot and cook till tender. In skillet melt 1 tbsp butter and add flour, cook for a minute, slowly add half and half stirring constantly. Once thickened add to soup base. Add crumbled bacon just before serving.
