Introduction

THESE PANCAKES ARE SO GOOD! THESE PANCAKES ARE SO GOOD!
Number of Servings: 18

Ingredients

    1 cup buckwheat flour
    1 cup all-purpose or whole wheat flour
    2 tablespoons sugar
    1 teaspoon baking soda
    1 teaspoon salt

    2 cups buttermilk
    1⁄4 cup (1⁄2 stick) butter,melted
    2 egg yolks

    2 egg whites

Directions

About eighteen 4-inch pancakes

Whisk dry ingredients together in a large bowl

Mix wet ingredients in a separate bowl. Pour the wet ingredients over the dry ingredients and combine with a few quick strokes of the whisk, leaving the batter slightly lumpy.

Whisk the egg whites until stiff but not dry. Fold into batter just until blended.

    Joy of Cooking book states 2 TEASPOONS of sugar not tablespoons. Not sure if author of this post changed it or it is an error. Could throw off the nutritional counts a bit. - 3/14/11
