Ingredients

About 7 large scallions
1/2 cu. diced tomato
1/2 cu. chopped fresh mushrooms
1 cu. finely shredded part skim mozzarella
4 large eggs
1 tbsp. fresh sweet basil, finely chopped
1 tsp. Italian Seasoning
1/4 cu. 1% milk
About 1 oz. grated asiago cheese
1 9" frozen pie shell (thawed)
Salt and pepper to taste
Directions
In a large mixing bowl, combine:
7 large scallions, finely chopped (about half way up the "stem") and all ingredients. Mix thoroughly. Poor into shell. Add a sprinkle of parmesan across the top, if you wish. Bake at 375 for about 45 minutes or until the top begins to brown and cooked through.
