Ingredients

2 large eggs
2 oz feta
1 (12.3 oz) block Mori-Nu Lite Firm Tofu
1 cup baby kale
2 tbsp nutritional yeast
1/4 tsp garlic salt
black pepper, to taste
1/2 tsp Red Pepper Flakes or Cayenne (or to taste)
Tips
If you prefer your baby kale less crunch and fresh, add it when you add your tofu, and cook until slightly wilted.
Directions
Pat tofu very dry.
In a non-stick skillet over medium heat, scramble the eggs along with the feta.
As the eggs start to cook and firm up, add tofu and sprinkle with the yeast, salt, and pepper(s). Scramble, chopping the tofu as finely as you can.
Once eggs are cooked, add the kale and cook lightly.
