Introduction
I put this together one evening a few weeks ago and it was a big hit with my family. We've had it several times since. My daughter even takes the leftovers to school for lunch! Ingredients

4 pounds catfish fillets
4 T. finely shredded fresh parmesan
1 clove (medium or large) fresh garlic
6 or 7 full sprigs fresh parsley
2 T. Butter (real is better)
1 C. Panko crumbs
1 t. dried Basil
1 t. Caldo Chicken bullion (or similar)
1 t. Tony Chaceres (or similar) Cajun Seasoning
Directions
Preheat oven to 400.
Rinse fish and pat dry. Place on a sprayed baking sheet (like a jelly roll pan---this is juicy).
Whiz rest of ingredients except Tonys in food processer till fine and mixed well. Sprinkle fish with the Cajun Seasoning, then top evenly with the Parsley-cheese mixture, patting it down to make better contact with the fish.
Bake until the fish flakes easily (in my oven it's about 15 minutes, but keep an eye on it) and is white throughout.
Serving Size: 1 fillet---roughly 8 oz
