Ingredients

    Lentils
    Chicken or Beef - cooked or leftovers, chopped
    Potatoes, peeled and sliced
    Carrots (optional)
    Onions (optional)
    Tomato Paste
    Chicken Broth/Bouillon (optional)
    Water
    Salt (optional)
    Pepper

Tips

The original version of this recipe appeared on a blog from someone who lived through the collapse of the Argentinian economy.

The original version omits carrots and onions and is quite satisfactory as a low-cost meal.

We use this recipe a lot, which is why I've entered it into the recipe database. FerFAL generously allows the recipe to be shared.

Directions

Soak lentils for several hours. Rinse.

Chop onion and carrot and saute together in a couple of teaspoons of oil/butter til onion is translucent.
Peel and thinly slice potatoes.

Add 4-6 cups++ of water or broth (for thin or thick soup), lentils, onion, carrots, potatoes, chopped meat and tomato paste to a soup pot and bring to a boil.

Turn down heat and simmer for 45 minutes to an hour.
Add a dash of salt and pepper and serve.

    Incredible!
    delicious, easy and filling - good way to use up leftover chicken or beef - recipe could use a bit of tweaking as far as how much of each ingredient to use - I used 2 carrots, 1 med onion, 4 med potatoes and half a small (tiny) can of tomato paste. Use orange lentils - they cook faster than brown. - 3/5/20
