    The Kraft package states that is says it makes 7 servings but doesn't state how much is in each servings such as cups. At 390 per serving. I think it makes more than that, at least 8 or 9 servings.

Omit potatoes. Serve over noodles or mashed potatoes.
Substitute
Substitute cut-up peeled sweet potatoes for the quartered red potatoes.
