Ingredients

•1 C sliced almonds, divided in two parts
•1/4 C regular or whole wheat flour (or GF flour or ground flaxseed)
•4 (6 oz) tilapia fillets
•1/2 tsp. salt
•2 Tbsp. olive oil
•1 Tbsp. butter
Directions
•Combine half the sliced almonds (1/2 C) with flour in a shallow bowl.
•Sprinkle fish evenly with salt; dredge in almond/flour mixture.
•Add the olive oil and butter to a large heavy skillet over medium heat; add fish and cook 4 minutes on each side or until golden brown. Remove fillets to a serving plate.
•Add remaining 1/2 cup almonds to skillet and cook, stirring often, until golden brown. Remove almonds and sprinkle over fish. The almonds get really toasty, crunchy, and delicious!
