Introduction

Ingredients

1 1/2 cups gf flour, Bob's Red Mill
2 cups cornmeal
1/2 cup sugar
1 teas baking powder
1 teas baking soda
1/4 cup veggie oil
1 teas salt
2 eggs, slightly beaten
6 oz vanilla greek yogurt
1/2 cup lite mayo
2/3 cup skim milk
1 stick butter, melted
1 14 oz can creamed corn
Tips
Do not feel the need to over mix. The batter will appear lumpy.
Directions
1. Mix all the dry ingredients with whisk.
2. Blend all wet ingredients separately.
3. Add wet to dry.
4. Pour into glass dish 11x17 sprayed with Pam.
400 degrees 25-30 mins. Edges will be toasted color and pull away from the dish. DO NOT OVER BAKE. ENJOY!!
Serving Size: in a 11x17 glass dish makes 20 even pieces & a skinny row
