Introduction

quick and easy, can be made totally vegetarian by substituting vegetable stock of chicken stock. Ingredients

    4 cups rough chopped kale
    3 cans cannelini beans
    5 cans diced tomatoes
    2- 32 oz boxes of chicken broth
    3 carrots sliced
    2 stalks celery sliced
    1 medium onion/1 cup diced onion
    3 cloves garlic chopped
    2 tsp italian seasoning
    2 tsp salt
    1/2 tsp black pepper

Tips

you need a large stock pot to make this soup, it will not fit in the large pot of a typical pots and pans set.


Directions

saute onion, celery, carrot, garlic, salt, pepper in 1 tblsp olive oil till translucent. add remaining ingredients, simmer on low for aprox 90 minutes
