Introduction

Ingredients

    2 bunches Watercress, just the leafy tops
    4 cans low sodium chicken broth
    2 cans sliced potatoes

Directions

Drain potatoes pour into blender, add 1 can broth and blend to chunky/smooth texture. Pour mixture into pot. Pour another can of broth in blender and add watercress, blend til smooth and pour into pot with potato mixture. Cook until hot adding black pepper to taste.

    Very Good
    I love watercress in any form, especially soup, but I don't see why anyone would ever want to buy canned potatoes! They have an awful texture & taste. Much better to boil up a few fresh ones & mash them into it. I added onions as well, & garnished with sour cream. - 11/9/08

    Good as is if you're stuck with lots of canned good which I often am or great if you make totally fresh. I add heat to everything, but I love the watercress. - 11/9/08

    Incredible!
    Fantastic! I used homemade veg stock and added onion, garlic. Served w/whole wheat toast points instead of crackers. Very satisfying! - 11/9/08
