Introduction

Ingredients

1/2 lb. 96/4 ground beef
1 small can tomato sauce
1 can diced tomatoes with basil, garlic and oregano
6 oz. (or 1/2 box) tri-color rotini pasta
1/2 cup diced onion
1/2 cup julienned carrots
1 tsp. minced garlic
1 1/2 cups Italian blend cheese (divided)
salt/pepper to taste
Tips
To control calories/fat I put one cup of the casserole in a bowl and then top with 2 tablespoons of cheese.
Directions
1. Cook meat, onion and garlic until meat is no longer pink.
2. Cook noodles until al dente.
3. Drain any liquid or fat from meat. Add canned tomatoes, carrots and tomato sauce.
4. Bring meat mixture to a simmer. Simmer for 5 minutes or until carrots are tender.
5. Stir drained pasta into meat/tomato mixture.
6. Sprinkle cheese on top and allow to melt.
