Ingredients

    2.5 Cups cooked rice (white)
    1 pound lean ground beef (96% lean)
    2 Cups mixed peppers & onions (frozen)
    1 teaspoon chili powder
    1/2 teaspoon ground cumin
    1/4 cup light sour cream
    2 cups green enchilada sauce (about 1 1/2 cans)
    1 cup shredded cheddar cheese, divided
    1 can sliced black olives
    1 cup canned black beans, rinsed
    1/2 cup sliced green onions

Directions

Cook the hamburger with peppers & onions until cooked through. Add chili powder & cumin. In a separate bowl, mix sour cream, enchilada sauce, 1/2 of the cheese.

Once the meat mixture is cooked through, add olives and black beans, followed by enchilada sauce mixture.

Cook through and garnish with remaining cheese & green onoins.

Serving Size: 6 (approximate 1 cup size) servings
