Ingredients

    Lean Ground Sirloin 10% Fat, 14 oz
    Ditallini Pasta 4 oz uncooked
    Beans, red kidney 1/2 can, drained and rinsed
    Beans, great northern, 1/2 can, drained and rinsed
    4 Carrots, julienned
    2 Stalks Celery diced small
    3/4 Onion diced
    Beef Broth, 3 cups+
    Tabasco Sauce, 1 tsp
    Garlic, 2 tsp finely chopped
    Petite Cut Diced Tomatoes 2 regular (15 oz) cans
    Tomato Sauce 28 oz jar
    Salt, 1 tsp
    Pepper, black, 1 tsp
    Oregano, ground, 2.5 tsp

Tips

If you prefer a "juicier soup" you can add more beef broth or some tomato juice. The amounts shown will yield a dense, hearty soup. Adjust seasonings to your taste.


Directions

Brown the ground sirloin, drain fat
Prepare the Carrots, Celery and Onion and add to the pot with the remaining ingredients except for the pasta. (Note: I microwave the veggies for 5 minutes in a pyrex bowl with a few tablespoons of water to pre-cook and save time, but they can also be cooked in the soup. Allow to simmer for 1 hour or until veggies are tender and flavors have begun to meld. Add pasta and cook until pasta is tender.

Serving Size: Makes 8 generous bowls of soup
