    2 slices Bread (Any you prefer)
    1 slices Mozzarella
    2 Slices Tomato (I go with Beefsteak)
    1 Tbs Basil or Tomato Pesto


Heat grill pan or panini press.
Coat one side of each bread slice with butter. Lay one slice, butter side down, on the grill.
Spread pesto on the bread while on grill, then mozzarella and tomatoes. Top with last slice of bread.
Press and cook until bread is golden brown and the cheese has melted.
Remove from heat, let cool.
Cut and serve.
