Ingredients

1 lb. Ground Chuck, 85% Lean
1 Medium Green Bell Pepper
1 Medium Red Bell Pepper (Peppers, sweet, red, raw)
1 Medium Onion, chopped
2 Cups Salsa, Chi Chi's
14.5 oz can diced Tomatoes, Del Monte (not drained)
14.5 oz can Corn, canned, no sugar added (drained)
14.5 oz can Beans, Bush's Black Seasoned (rinsed & drained)
5 Chi Chi's Whole Wheat Fajita Style Tortillas
2 Cups Cheddar Cheese, shredded
Tips
Can add (not included in calculations):
- Taco Seasoning to taste
- Black Olives (1/2 small can)
Directions
Preheat oven to 375 degrees
Brown meat with peppers in large skillet; drain
Stir in salsa, tomatoes, corn and beans
Spread 1 cup of meat mixture on bottom of 13x9 in pan
Top with 2.5 tortillas, overlap as necessary
Cover with layers of half each of remaining meat mixture and cheese
Top with remaining tortillas and meat mixture
Cover with foil
Bake 25 to 30 min or until heated through
Top with remaining cheese
Let stand 5 min or until cheese is melted
