Ingredients

    2 tsp canola/olive oil
    1/2 small onion, thinly sliced
    1/3 medium red pepper, chopped
    2 C broccoli florets, chopped
    2 C spinach
    6 eggs
    1/2 C plain yogurt
    3 tbsp. almond meal
    3/4 tsp salt
    1/2 tsp paprika
    1/4 tsp oregano
    1/4 tsp basil
    dash pepper

Directions

Saute vegetables, place in a greased 9" pie pan. Whisk together remaining ingredients and pour over vegetables. Bake at 350 degrees for 45 minutes.
