Ingredients

    1 TB salted butter
    1 TB EVOO
    1 cup chopped onion
    340 g (about 2 large) peeled and chopped white potatoes
    1/2 LB (about 2 links) chopped mild Italian Sausage
    1 litre chicken stock (no salt added)
    4 cups fresh chopped spinach
    1/2 tsp dried basil
    4 dash sea salt
    2 dash pepper
    1 cup half and half cream

Directions

In a hot sauce pan over med high heat, melt butter and EVOO. Saute onion until soft and translucent. Add sausage and potato, continue sauteeing for about 10 min. Add broth and herbs & S&P and simmer for 20 min. Add spinach and simmer until spinachis just cooked (about 2-3 min) Add cream (slowly) adjust seasoning if needed. Puree with a hand blender. This makes about 2 litres or 8 cups.
