Ingredients

    4 skinless boneless chicken breasts
    2 cups long cooking brown rice
    1.5 cups salsa
    2 cups water
    1 can black beans
    1.5 cups frozen corn
    1 cup shredded 2% cheddar cheese

Directions

Mix all ingredients except chicken and cheese in 9x11 baking dish. Lay chicken on top of mixture. Cook for approximately 45 minutes at 400 degrees. Top with cheese, return to oven long enough to melt cheese. Serve.

Serving Size: 8 servings - 1/2 chicken breast and about 1 cup rice mixture
