Number of Servings: 3

Ingredients

    3 oz cooked Chicken breast, diced
    4 oz Green Pepper, chopped
    4 oz Red Pepper, chopped
    4 oz Feta cheese, cut into small cubes
    1/2 regular size Roma Tomato
    2 tbsp cooked Quinoa
    4 Black Olives, pitted and sliced
    Salt and Pepper to taste
    1 tbsp Extra Virgin Olive Oil
    1 tbsp White Wine Vinegar

Directions

Cut peppers, chicken, cheese and tomato into medium sized pieces. Dice feta cheese to 1/4" pieces or crumble as you like. Mix all ingredients, including the oil and vinegar, together. Best if you leave the salad to sit for an hour or so before eating.

Serving Size: Makes 3 1-cup servings
