Introduction

Ingredients

Bacon, 6 Slices
Sausage, 3oz (Jimmy Dean Premium Pork Sausage)
Red Bell Pepper, Half
Green Bell Pepper, Half
Red Onion, Half
Mushrooms, White, 1 cup
Roma tomato, 2 medium size
7 Eggs, Free Range
Mild Cheddar cheese, 2oz
Directions
Cook sausage (in 2 patties) and bacon together in an oven save pan. Set aside and reserve for later. Use oil from bacon and sausage to cook with the vegetables.
Add red onion and cook until they start to caramelize.
Add the rest of the vegetables in this order:
Cut green and red bell peppers into strips.
Cut mushrooms into 1/4 inch slices and add.
Cut Roma tomatoes into quarters (or smaller if you like)
Cook vegetables until they are thoroughly warm. Add the bacon and sausage and mix in. Cut sausage into smaller pieces before adding. Add eggs by cracking them over the mixture and break the yolk. Eggs do not have to be mixed in. Cook until you see eggs starting to firm up. Put in the oven under the broiler about a third of the way from the top of the oven. Cook for approximately 5 minutes. Add the cheese to cover the top of the casserole and cook until the cheese starts to brown. About 3 or 4 minutes. Remove from oven and let sit for 5 minutes to cool off a little bit. Enjoy your delicious breakfast.
