Introduction

I had 2 very ripe pears I needed to use! I had 2 very ripe pears I needed to use!
Number of Servings: 9

Ingredients

    2 fresh very ripe pears
    1/3 cup white sugar
    1/3 cup packed brown sugar
    1/3 cup vegetable oil
    1 large egg
    1 1/2 cups whole wheat flour (I used Bob's Red Mill)
    1/4 tsp. salt
    1 teaspoon baking soda
    1 teaspoon almond extract

Tips

Note the photo shows a nut on top. I did not use nuts in my cake (don't like them!).


Directions

**Preheat oven to 350 F degrees.
**Grease and flour a 9" x 9" glass baking pan.
---Core and peel the pears. Slice very thin. Mix the pears with the white and brown sugars and set aside.
---Measure the flour, salt and baking soda into a mixing bowl and stir with a whisk to mix together.
---Add the oil, egg and almond to the flour mixture and stir (by hand) just until blended.
---Add the pear and sugar mixture to the bowl and stir to blend.

**Pour mixture into baking pan, bake for 30 minutes, check to see if a toothpick comes out clean. Remove from oven, allow to cool.
**Serve with a bit of fat free or low calorie whipped topping; or dust with powdered sugar. (Topping not included in calorie count.

    Disgusting, couldn't taste anything but almond, took 10 mins more to bake, 1 more egg because the mixture was dry, an absolute joke of a recipe. Eat some cardboard and save yourself an hour. - 4/2/21
