    1 TBS * Olive Oil
    5 cup * Onions,sliced
    1 tsp * Garlic, powder or 1-2 Cloves, minced

    16 oz * Shrimp
    1 can * Coconut Milk Lite
    1 tbsp Panang Curry paste

    1 cup * Red Bell Pepper - chopped
    1.5 C Asparagus Cut -fresh or frozen


Cook favored pasta or rice according to directions.

Heat olive oil in skillet while coarse slicing onion.

Add Onion to oil and saute till softening. Add garilic and shrimp saute till shrimp turns pink, about 2 minutes.

Add coconut milk and panang paste and stir in well. Add chopped red bell peppers and asparagus cut into pieces about 3".

Simmer for a couple minutes Season to taste.

Serve over or with pasta or rice.

    I made this last night and served it over brown rice. I loved it my kids not so much... I don't care I am just going to keep putting healthy foods in their face and eventually they will surrender!!! LOL!!! Thanks for sharing! - 1/28/10

    I'm making this tonight for dinner! You can actually buy curry already made to make this quicker and think about adding brocolli, carrots and potatoes too. Serve over quick cook brown rice. yum! - 5/19/09
