Ingredients

2 cups of black beans (black eyed peas can be substituted)
1 cup frozen yellow sweet corn
1 cup chopped cherry tomatoes
.5 cup finely chopped onion
3 tbsp cilantro, diced
1 medium jalepeno pepper
1 tsp sugar
1 oz. red wine
2 tbsps Balsamic vinegar
2 tbsps olive oil
Directions
Defrost corn. Drain and rinse beans, place in a large bowl. Add onion, tomatoes, jalepeno, and cilantro to bowl and mix.
In a seperate bowl, mix the remaining ingredients then pour into the first bowl and mix well. Refrigerate for 1-2 hours prior to serving so that the flavors are able to meld.
Serve with baked chips, vegetables, or as a topping for baked potatoes.
