Ingredients

    ground walnuts
    dutch processed cocoa powder
    baking soda
    baking powder
    salt
    eggs, room temperature
    coconut milk, room temperature
    maple syrup (or honey)
    coconut oil, melted
    vanilla extract

Tips

This is not a sweet, traditional brownie. It is crumbly but satisfying when you are missing your favorite brownie. I mistakenly baked this in an 8x8 square pan so the brownies were thicker than they should be. I will try with honey next time and compare the texture. I may also try it with almond flour or coconut flour as they are both finer than the ground walnuts and may offer a denser brownie.


Directions

blend dry ingredients together,set aside. Whisk eggs in a bowl for 1 minute. Add room coconut milk, syrup and vanilla. Whisk again until well blended. Whisk melted coconut oil a little at a time into egg mixture. Blend completely then add wet ingredients to dry. Whisk together. Pour into a 13x9 buttered or sprayed w/oil spray baking dish. Bake 35-40 minutes or until toothpick inserted into center comes out dry.
