Ingredients

    2 cups oats (ground into flour)
    2 tsp. oat bran
    3/4 tsp. baking soda
    3/4 tsp. Apple Pie spice (Epicure Selections)
    3 medium overripe bananas
    1 - 113 g. unsweetened apple mixed berry applesauce (but any kind will do)
    1/2 cup raisins
    1/2 cup chopped walnuts
    1/3 cup dried cranberries
    1/3 cup medium unsweetened coconut
    2 Tbsp. maple syrup


Directions

Preheat oven to 350 F. Line a baking sheet with parchment paper.

Use a good blender to blend the oats into a fine flour. Pour the oat flour into a mixing bowl and add the oat bran, baking soda, and apple pie spice.

Put the peeled banana into the blender and blend until completely smooth. Add to the oat mixture along with the rest of the ingredients and mix until well combined.

Place heaping tablespoons full of cookie dough onto baking sheet. These cookies do not spread so they can be placed quite close together.

Bake for aprox. 15 minutes. Cool cookies on a wire rack and store in an airtight container in the refrigerator.

Feel free to make substitutions, these cookies are very forgiving, I make a plain batch and add chocolate chips for my kids!
