Introduction

Great overnight oatmeal. Serving size is about one cup; this made 4 servings in my slow cooker. Great overnight oatmeal. Serving size is about one cup; this made 4 servings in my slow cooker.

Ingredients

    2 medium apples, diced (I left the peels on)
    1 cup oatmeal (old fashioned or steel cut...not instant)
    1-1/4 cup almond breeze coconut milk, unsweetened
    1-1/4 Cup water
    2 tbsp maple syrup (or equivalent sweetener to taste)
    2 tbsp earth balance (optional)
    2 tbsp flax seed meal
    1 tsp cinnamon

Directions

Spray sides of slow cooker with oil (otherwise oatmeal WILL STICK). Place all items in slow cooker, stir to mix. Cook on low 6-7 hours. Mine was thin, using old-fashioned oats. Steel cut oats would make it thicker.

Serving Size: Makes 4 cups (aprox) , 4 servings
