Ingredients

    1 pound ground beef
    2 garlic cloves minced
    3 bacon strips, diced
    1 small onion chopped
    1/4 teaspoon dried oregano
    1 can (11 ounces) corn
    5 1/2 cups mashed potatoes (prepared without milk and butter.)
    2 egg whites beaten
    3 tablespoons butter
    1 to 2 tablespoons fresh parsley
    half a cup of tomato sauce

    salt and pepper if you want it.

Directions

Cook the ground beef until no longer pink; drain and set aside. In the same skillet, cook the bacon, oregano, garlic, and onion until bacon is crisp. Stir in the tomato sauce, corn and reserved beef. Bring to a boil. Reduce heat; simmer; uncovered for ten minutes.
Meanwhile, combine the mashed potatoes, eggs, 2 tablespoons of butter and parsley. Spread half of the potato mixture onto the bottom and sides of a greased nine inch pie plate. Top with the beef mixture and remaining potato mixture. Bake at 375 degrees for 20 minutes.
Brush with the butter. Bake for 10 minutes longer or until top is golden brown.
