Ingredients

    1 large red bell pepper - large dice
    2 cups diced zucchini
    1 cup diced raw carrot
    12 grape tomaoes cut in half
    1 15oz can Goya Black beans rinsed and drained
    4 tsp ground cumin
    1 lime , zest and juice
    1 TBSP. extra virgin olive oil.

Directions

Place olive oil in saute' pan low heat.
Saute' peppers, zucchini, carrot, tomotoes.
Add black beans, cumin, lime zest and lime juice.

Serving Size: Makes 4 1 cup servings
