Ingredients

    2 eggplants- cubed
    2 peppers- diced
    Mushrooms- sliced- .5 cup
    tomato sauce- 1 small can
    olive oil- 1 tsp
    tomato- to taste

    sauce mushrooms in the olive oil. Add other ingredients. Cover, and let simmer for 2 hours.

Directions

Simmer for 2 hours
