Introduction

Store dry mix until needed.
Add oil (use extra for waffles), egg or egg replacer, and water to desired consistency for baking.

Ingredients

    3 cups brown rice flour
    1 cup chickpea flour
    1/4 cup sugar
    8 tsp (2T & 2t) baking powder
    1 tsp salt

Tips

Berries can be added to each cake while the first side bakes.


Directions

This mix is best stored in a refrigerator. Place 1-2 cups in a bowl and add oil, egg or egg replacer, and water. Cakes made with thin batter will be more difficult to turn. Heat griddle so that a splash of water sizzles. Drop batter by spoonfuls onto hot griddle, lightly pressing the center to spread the batter. Wait for the edges of the cakes to become dry. Flip and watch for the steam to lessen. Remove to plates or a rack.
