Introduction

Ingredients

    3 14.5 oz fat free chicken broth
    2 Cups diced Celery
    1 Cup diced onion
    12 Cups diced potato
    7 Cups fat free milk
    1 teaspoon black pepper
    1 teaspoon salt

Tips

You can skip the slower cooker and just blend the 2 cups of vegetables and add back to the pot if you can serve immediately.


Directions

Combine chicken broth, celery, onion, potatoes and salt and pepper in a large pot. Boil for about 20 minutes. Meanwhile pour milk in a 6 qt slow cooker and set on low for 4 hours.
When vegetables are tender transfer all but 2 cups to the slow cooker. Blend the remaining 2 cups with an immersion blender until smooth, add to the slow cooker. Let soup continue to cook and blend flavors for the remaining time. Add additional salt and pepper to taste.
